But these are some great whipper snappers. Lemon whipper snapper cookies that is.

You know me and my love of easy recipes. This one takes the cake, or rather cake mix. lol. Sorry for the bad jokes today, I must be tired.

Once again only 3 ingredients!

1 lemon cake mix
2 cups of whipped desert topping (aka. cool whip)
1 egg
oh yeah and a bit of powdered sugar….. so ok 4 ingredients.

Work the mix, topping and egg together. I say work because it does take some to get them all into each other. A pastry cutter might do a better job or even an electric mixer but I never use those. Too many things to clean up.

Next roll them into balls, dusting you hands with the powdered sugar. This helps some but all in all it’s a sticky mess!

Place them on a greased cookie sheet and bake for 10-12 min at 350.

After they come out let them set a minute before you put them on a rack to cool. Then dust some more with powdered sugar if you want.

They taste like a lemon bar but are way easier to throw together.

I first heard about this in one of the Joanne Fluke bakery murder mysteries I’ve been addicted to. I can’t remember which one right now. But apparently its one of those ancient recipes that everyone forgot about because I found a bunch of versions on the web.

One of Mrs. Fluke’s characters talked about experimenting with different flavors of cake mix and I thought about the different flavors of cool whip that are out there too.

If you give this a try and change it up let me know how it all turns out.

    Those look sooooo good. I wish I had a lemon cake mix and some cool whip. I’d make them right now (at 10PM) if I did! I’m a late night baker too. And froster. And sewer (although I should probably leave that one for daylight hours!)

    I’ve made these twice now and they’re so good. Thanks for sharing the recipe. The first time we made them we used Lemon Cake mix and the second time we made them we did a batch of lemon and also did a batch of Strawberry Cake Mix ones. (We packaged them together for little gifts for my son’s speech therapist). They were both fantastic.
